The Cold Bath Water Approach

Some homebrewers with air-conditioned houses are able to drop the fermentation a few degrees (usually about the same amount as with the wet towel) by leaving the fermenter in a bathtub filled with cool water and, several times daily, inserting a block of ice to cool the water. The idea is that instead of trying to carry the heat energy away from the fermenter, the heat is diluted into a larger volume of water and the water temperature is periodically lowered by adding ice.

One homebrewer we know uses this method regularly. He keeps a couple of plastic gallon jugs of water frozen in his freezer and simply adds one to the bathtub in the evening and another in the morning. He rotates the two jugs between the freezer and the bathtub and reports that he keeps his fermenter about 3 degrees cooler than it. would be normally.

This is not a method that we favor because it requires frequent temperature monitoring, and it is inefficient. Not only does the method require making a lot of ice, but the temperature drop is not enough for many homebrewers’ purposes. We mention it here only because it works for some folks and helps keep our eye on the perspective that simple is usually better.
